Chocolate Donuts Vegan-Style
You will LOVE these gluten-free baked vegan donuts!
Prep time 30 minutes
Makes 8 yummy vegan donuts (double the recipe for more)
Cooking time is 25 minutes
Ingredients:
- Rice Flour 1/3 cup
- Oat Flour 1/3 cup
- Sugar 1/2 cup
- Almonds 2 tablespoons, ground
- Cocoa Powder 1 1/2 tablespoons
- Coconut Flour 2 tablespoons
- Baking Powder 1 teaspoon (use gluten-free)
- Baking Soda 2 teaspoons
- Flaxseed 2 tablespoons, ground
- Salt 1/2 teaspoon
- Chili Powder 1 teaspoon
- Almond Milk 3/4 cup
- Unsweetened Apple Sauce 1/4 cup
- Sunflower Oil 2 tablespoons
- Chocolate Chips (vegan) 1/3 cup
Decoration ingredients:
Dark Chocolate (dairy-free, chopped) 1 cup
Coconut Milk 3/4 cup
Spinkles - your favorite flavor
(OR if you like a salty chocolate taste, see topping instructions below for the salt and vanilla preparation)
Vanilla 1 tablespoon
COARSE Salt 1/4 cup
Directions:
Pre-heat oven to 350 degrees
Grease donut tin
Mix all of the dry ingredients in mixing bowl
Add wet ingredients, mix
Let stand for 5 minutes
Use a tablespoon and spoon into donut tin
For a smooth top just wet your fingers and smooth
Bake for 20 to 25 minutes
Donuts should be firm to touch
Cool for 2-3 minutes in the donut tin
Remove and cool on a wire rack
Topping:
Place chopped chocolate in a bowl
Heat coconut milk until it just begins to boil, but not to a full boil
Pour over chocolate in the bowl and let is stand for 5 minutes (do not stir)
After 5 minutes stir coconut mild and chocolate together
Let cool so it thickens slightly
Spoon chocolate over your vegan donuts
Either top with your favorite sprinkles, OR for the salty vanilla option:
In a separate bowl mix 1/4 cup of coarse salt with 1 tablespoon of vanilla
Sprinkle coarse vanilla/salt over the donuts
