Autumn Apple Walnut Spinach Salad

Homemade Autumn Apple Walnut Spinach Salad

Prep time: 10 minutes

Serves 4-6

Salad Ingredients:

6 cups of baby spinach, or any spring green mix

1 red apple

1 green apple

Dried cranberries

1/3 cup crumbled Feta Cheese

1.3 cup dried cranberries

1 cup walnuts slightly crumbled

Dressing Ingredient:

1 cup apple juice

2 tablespoons honey

4 tablespoons apple cider vinegar

1/4 cup olive oil

Dash of black pepper

Instructions:

Core and cut apples in 1″ slices (you can chop them too)

Toss into the lettuce mix, then add the walnuts, cranberries and feta into a large bowl.

For the dressing: Whisk ingredients together and toss into the salad immediately – ENJOY!
